Smokey Chipotle Lime Grilled Chicken

This super flavorful chipotle lime marinated chicken is grilled to perfection creating a healthy and low carb dinner you can have ready in minutes.

Ingredients
- 1 ½ pounds of chicken breast cut into 4 pieces
- 2 smoked chipotle peppers in the can
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- ½ teaspoon onion powder
- 1 teaspoon tomato paste
- 2 cloves garlic grated
- ¼ cup olive oil
- Zest and juice of 2 limes
- Pinch of salt
Instructions
- Add all the ingredients (except the chicken) to the bowl of a mini chopper or immersion blender and blend until well combined.
- Add the chicken to a food storage bag and pour the mixture over the top. Massage it into the chicken, so that all pieces are well coated.
- Allow the chicken to marinate for at least 8 hours, but overnight is best. Then grill until the chicken reaches an internal temperature of 165F. I recommend using a meat thermometer so you can be absolutely sure it's cooked through. Serve with your favorite Keto friendly side dish.
