S’mores Baked Oatmeal transforms classic S’mores ingredients into a warm, baked breakfast casserole. Rolled oats are combined with almond milk, maple syrup, applesauce, ground flaxseed, and melted coconut oil, then layered with chocolate chips, mini marshmallows, and crushed graham crackers for texture and sweetness. Baking melds these elements into a moist, comforting dish with pockets of melted chocolate and gooey marshmallow throughout. It's ideal for sharing as a hearty breakfast or snack.
Ingredients
- 2 cups rolled oats old fashioned
- 2 cups almond milk unsweetened
- ¼ cup pure maple syrup plus more for serving
- 1 teaspoon baking powder
- ½ teaspoon salt sea salt
- 1 Tablespoon Flaxseed ground
- 1 Tablespoon coconut oil melted
- ½ cup applesauce
- 1 teaspoon vanilla extract
- ½ cup chocolate divided, chopped or chocolate chips
- ½ cup mini marshmallows divided
- ¼ cup graham cracker chopped or crushed
Instructions
- Preheat the oven to 375°F and spray an 8×8 square baking dish with cooking spray.
- Combine oats, milk, maple syrup, baking powder, sea salt, flaxseed, coconut oil, applesauce, vanilla, ¼ cup chocolate chips and ¼ cup marshmallows in a large mixing bowl. Stir to combine.
- Carefully pour oatmeal mixture into the prepared baking dish.
- Top with graham crackers and remaining chocolate chips and marshmallows.
- Bake for 40-45 minutes, until toothpick comes out clean.
- Let cool for 10-15 minutes then portion into 6 pieces and serve warm.
