S’mores Baked Oatmeal

S’mores Baked Oatmeal transforms classic S’mores ingredients into a warm, baked breakfast casserole. Rolled oats are combined with almond milk, maple syrup, applesauce, ground flaxseed, and melted coconut oil, then layered with chocolate chips, mini marshmallows, and crushed graham crackers for texture and sweetness. Baking melds these elements into a moist, comforting dish with pockets of melted chocolate and gooey marshmallow throughout. It's ideal for sharing as a hearty breakfast or snack.

Description

This S’mores Baked Oatmeal recipe begins by mixing rolled oats with almond milk, maple syrup, baking powder, sea salt, flaxseed, melted coconut oil, applesauce, vanilla extract, half the chocolate chips, and half the mini marshmallows. The mixture is poured into a greased baking dish and topped with crushed graham crackers, along with the remaining chocolate chips and marshmallows. Baking at 375°F for 40-45 minutes cooks the oats through and creates a golden, set surface that can be tested with a toothpick.

The final dish balances chewy oats with sweet, melty bits of chocolate and toasted marshmallows, alongside the subtle crunch and flavor of graham crackers. It offers a fun twist on traditional oatmeal reminiscent of campfire S’mores. Once cooled slightly, it can be portioned to serve warm.
