S'mores Energy Bites

S'mores Energy Bites are no-bake snack balls made from rolled oats, crushed graham crackers, chia seeds, peanut butter, honey, mini chocolate chips, and mallow bits. The texture is chewy with crunchy bits, combining sweet and nutty flavors reminiscent of the classic s'mores treat. Ingredients

  • 1 cup rolled oats or gluten-free oats, old-fashioned
  • 1/3 cup graham crackers can use gluten-free, finely crushed
  • 2 tablespoons chia seeds
  • sea salt a pinch
  • 1/2 cup peanut butter can use almond butter, creamy
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips
  • 1/4 cup mallow bits

Instructions

  1. In a large bowl, combine oats, crushed graham crackers, chia seeds, and salt.
  2. Add the peanut butter, honey, and vanilla extract. Stir until combined and mixture is moist. Gently stir in the mini chocolate chips and Mallow Bits.
  3. Roll the mixture into small balls, about 1-2 tablespoons per ball. Place in an airtight container and keep refrigerated for up to 2 weeks.
