Ingredients

Ingredients to make Easy Southwest Baked Chicken:
  • 4-5 chicken breast boneless and skinless
  • 1 cup canned black beans rinsed and drained
  • 1 cup corn rinsed and drained
  • 1 can diced green chilies
  • 1 red bell pepper diced
  • 1/4 cup chopped cilantro
  • 1 cup Colby jack cheese shredded
  • 1/2 tsp minced garlic 
  • 1/4 tsp cumin
  • 1/4 tsp crushed red pepper
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Mix the garlic powder, cumin, salt and pepper and set aside.
  2. Place the chicken in a sealable bag, sprinkle the chicken with the seasoning mixture.
  3. In a small bowl combine the corn, black beans, green chiles, red bell pepper, and chopped cilantro and mix well.
  4. Set to the side.
  5. Line a baking pan with parchment paper.
  6. Place the chicken on the pan and bake for 10 minutes.
  7. Remove the chicken and then place it In a large casserole dish, lay the chicken breast flat in the baking dish.
  8. Spread the corn mixture evenly over it.
  9. Add cheese on top of the mixture.
  10. Bake uncovered at 375˚F for 30-40 minutes.
  11. Enjoy!
