Snickerdoodle Snack Bites
Snickerdoodle Snack Bites are small, no-bake energy balls made by processing nuts, cinnamon, salt, dates, and vanilla until sticky, then forming into bite-sized balls. They have a chewy texture with a warm cinnamon flavor and nutty base. After chilling, they firm up and can be stored in the refrigerator for convenient snacking. This recipe is useful for homemade, portable snacks with natural sweetness and familiar spices.
Ingredients
- 1 cup cashew nuts whole raw
- 1/2 cup almond raw
- 2 teaspoons ground cinnamon
- 1/4 teaspoon salt fine sea salt
- 10 ounces Medjool dates , pitted (about 1 1/4 cup, tightly packed)
- 1/4 teaspoon vanilla extract
Instructions
- In the bowl of a large food processor fitted with an "S" blade, grind the cashews, almonds, cinnamon and salt until finely ground. Add in the pitted dates and vanilla and process again until the dough becomes very sticky. (Mine started to become a big ball in the food processor.)
- Use a tablespoon to scoop the dough and roll it between your hands to make ball shapes. Arrange the balls on a plate or baking sheet lined with parchment paper, then place them in the fridge or freezer to set for one hour. Once the balls have firmed up a bit, store them in an airtight container in the fridge for up to two weeks.
Notes
- For a different shape, press the dough into a parchment-lined loaf pan and slice into bars.
- Store snack bites in an airtight container in the refrigerator for up to two weeks.
- Use Medjool dates for natural sweetness and binding; remove pits before processing.
