Description

These snack bites combine whole cashews and raw almonds ground finely with cinnamon and sea salt. Pitted Medjool dates and vanilla extract are added to create a sticky dough which is then rolled into small balls. The mixture binds naturally from the dates, requiring no additional sweeteners.   • 1 cup cashew nuts whole raw
  • 1/2 cup almond raw
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt fine sea salt
  • 10 ounces Medjool dates , pitted (about 1 1/4 cup, tightly packed)
  • 1/4 teaspoon vanilla extract

Instructions

  1. In the bowl of a large food processor fitted with an "S" blade, grind the cashews, almonds, cinnamon and salt until finely ground. Add in the pitted dates and vanilla and process again until the dough becomes very sticky. (Mine started to become a big ball in the food processor.)
  2. Use a tablespoon to scoop the dough and roll it between your hands to make ball shapes. Arrange the balls on a plate or baking sheet lined with parchment paper, then place them in the fridge or freezer to set for one hour. Once the balls have firmed up a bit, store them in an airtight container in the fridge for up to two weeks.
