Snowman Truffles

Snowman Truffles combine sweetened condensed milk and shredded coconut into soft coconut balls shaped as snowmen. These snowmen truffles are assembled by stacking smaller coconut balls atop larger ones, then decorated with melted white chocolate, icing for the eyes and buttons, orange accents for noses, pretzel stick arms, and candy straps as scarves. Ingredients

Coconut truffles:
  • 11.25 oz sweetened condensed milk can
  • 4 cups shredded coconut plus extra for rolling, or desiccated coconut
Decorate:
  • 4 oz white chocolate melted
  • Icing or store-bout black icing tube, black-colored
  • Icing or orange sprinkles, orange-colored
  • 24 pretzels 2 inches each, thin sticks
  • 12 candy straps 5 inches long and in different colors

Instructions

Make the truffles:

  1. Stir the coconut and sweetened condensed milk together in a large mixing bowl until well combined.
  2. After that, roll the mixture into about 12 larger balls and 12 smaller balls, for the snowmen's bodies and heads.
  3. Add some extra shredded coconut to a shallow plate, and roll each coconut ball in coconut. Set aside.
Make the snowmen:
  1. Add some melted white chocolate onto the larger balls and stick the smaller ball on top of it. Allow the snowmen to firm up at room temperature or in the fridge before decorating.
Decorate the snowmen:
  1. Using piping bags, draw with the black icing the eyes and buttons.
  2. Using the orange icing draw the noses, or stick an orange pretzel instead.
  3. Insert the pretzel sticks into the snowmen to make arms and gently wrap the snowmen's necks with the candy straps.
  4. Store the snowmen truffles in an airtight container at room temperature for 1-2 days, or in the fridge for up to 1 week.
