Soba Noodle Salad

Soba Noodle Salad features chilled noodles tossed in a creamy peanut sauce with crunchy edamame, shredded carrot, chopped bell pepper, cabbage, green onion, and cilantro. The salad balances textures and flavors with a nutty dressing enhanced by sesame oil, soy sauce, garlic powder, lime juice, and optional chili sauce. Ingredients

Peanut Sauce
  • ½ cup peanut butter crunchy
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 2 teaspoons garlic powder
  • 1 tablespoon agave
  • lime juice of 1
  • ½ cup water to start
  • ¼ teaspoon Sriracha sauce to taste (optional, or other chili sauce
Salad
  • 2 cups edamame thawed, frozen, shelled
  • 1 cup carrot shredded
  • 1 large red bell pepper chopped
  • 1 cup cabbage shredded, purple or green
  • 1 cup green onion thinly sliced
  • ½ cup cilantro
  • 1 soba noodles 9.5-ounce package
  • ¼ cup peanuts garnish (optional, crushed
  • sesame seeds garnish (optional

Instructions

  1. In a small bowl or food processor, mix all the sauce ingredients until smooth and set aside.
  2. In a large pot, cook the noodles according to package instructions. Run the noodles under cold water.
  3. Put the cold cooked noodles back into the pot and pour half of the sauce over. Mix well and add all of the veggies and cilantro. Gently mix well.
  4. When ready to serve, add the remaining dressing, mix and enjoy chilled or at room temperature.

Notes

  • Serve with lime wedges, crushed peanuts, or sriracha for added flavor and texture.
  • Fresh carrots and cabbage can be swapped for a store-bought coleslaw mix for convenience.
  • Prepare a double batch of peanut sauce to use later in stir-fries or other salads.
