Soba Noodle Salad
Description
Soba Noodle Salad combines cooked and chilled soba noodles with a peanut-based dressing made from crunchy peanut butter, sesame oil, soy sauce, garlic powder, agave for sweetness, lime juice, and a hint of chili sauce for optional heat. The noodles are mixed with edamame, shredded carrot, chopped red bell pepper, shredded cabbage, green onions, and cilantro to provide a variety of textures and fresh flavors.
The peanut sauce clings to the noodles and vegetables, offering a savory, tangy, and slightly sweet profile with a bit of nuttiness and mild spice. The salad is served chilled or at room temperature, which enhances its refreshing qualities.
Garnishes like crushed peanuts and sesame seeds add extra crunch and visual appeal. This salad works as a light lunch or side dish and can be customized by swapping the fresh vegetables with coleslaw mix for ease. Doubling the sauce can provide extra dressing for other dishes.
