Ingredients

For the Dish:
  • 10 oz soba noodles
  • 1 Lb asparagus cleaned and cut into 3
  • 8 oz mushrooms sliced
  • 2 Cups edamame shelled
  • 2 carrots peeled and julienned (or sliced thinly)
  • salt + pepper
  • 1 Teaspoon oil any kind
For Sauce
  • 2 Tablespoons soy sauce
  • 2 Teaspoons sesame oil
  • 2 Teaspoons Sriracha
  • Juice of 1 lime
  • 1/2 Teaspoon ginger minced
Garnish
  • 1/4 Cup cilantro chopped
  • 1 green onion sliced

Instructions

    Cup of Yum
  1. Mix all the sauce ingredients together in a small bowl. Set aside
  2. Bring one big pot of water to a boil
  3. Season the water with salt, pepper and add a little oil
  4. Throw in the soba noodles, edamame, mushrooms and asparagus. Cook for 1 minute
  5. Add the carrots and cook for 2 more minutes. Stir
  6. Drain the whole mixture in a colander
  7. Pour the pasta and veggies back in the pot
  8. Add the sauce on top and stir well with a wooden spoon
  9. Serve and enjoy!
  10. PS: DO NOT OVERCOOK
