Ingredients
- 8 oz. red onion , diced
- 8 oz. tomatoes , peeled, seeded and finely diced
- 8 oz. queso fresco , fresh ricotta or mozzarella cheese, cut into small cubes
- 3 ears yellow corn
- 20 black olives
- 16 oz. large green fava beans , without skin, fresh or frozen
- parsley
- 4 tablespoons olive oil
- vinegar (or lemon juice)
- salt
- pepper
Instructions
- In a pot generously filled with boiling water, add the corn on the cob and cook for 45 minutes.
- In a saucepan, bring a large quantity of water to a boil and boil the beans for 15 minutes for frozen beans (or 25 minutes for fresh ones), over high heat and uncovered.
- Drain and shell the corn cobs. Let them cool completely.
- Drain the beans and let them cool completely.
- In a salad bowl, add the beans, corn, onion, tomato, cheese and olives.
- Add olive oil, salt, pepper and vinegar or lemon juice to taste. Mix.
- Sprinkle with flat parsley leaves and serve.
