Sopa de Letrinha - Homemade Alphabet Soup
Sopa de Letrinha is a homemade alphabet pasta soup cooked with minced vegetables like carrot, celery, onion, scallions, and Brazilian sofrito in a savory chicken stock base. The small alphabet pasta cooks quickly, resulting in a comforting broth with tender tiny noodles and vegetables infused with mild aromatics and seasoning.
Ingredients
- 7 ounce alphabet pasta package
- 1 tablespoon olive oil
- 1 carrot about a cup, large, peeled and cut into chunks
- 1/2 onion about a 1/2 cup, small, cut into chunks
- 1 bunch scallions about 2 cups, both white and green parts, cut into chunks
- 1 celery about a 1/2 cup, stalk, cut into chunks
- 2 teaspoons sofrito or 3 cloves of garlic, minced, Brazilian style
- 7 cups chicken stock
- salt to taste
- black pepper to taste
Instructions
- Add the carrots, the celery, the onion, the Brazilian sofrito, and the scallions to a food processor, and pulse to mince. Set aside.
- Heat the olive oil in a large pot over medium to high heat, then add the minced vegetable mixture.
- Saute until soft, approximately 8-10 minutes.
- Add in the pasta and cover with the chicken stock.
- Bring to a simmer, and simmer until the noodles are cooked. This will take less than 10 minutes because the pasta is so small, so keep an eye on it!

Notes
- Let the soup cool completely before storing in the refrigerator for up to one week.
- Freeze in freezer-safe containers, leaving space for expansion; thaw in the refrigerator before reheating.
- Reheat gently in microwave or on stovetop to avoid overcooking pasta.
- Add crushed tomatoes or tomato puree to create a Mexican-inspired version.
- For a vegan option, swap chicken stock with vegetable stock.
