Sopa de Letrinha - Homemade Alphabet Soup
Description
This homemade alphabet soup begins by mincing a combination of carrots, celery, onion, scallions, and a Brazilian-style sofrito or garlic mixture. The vegetables are sautéed in olive oil until softened to develop their flavors. Then the alphabet pasta is added and covered with chicken stock to simmer just long enough to cook the small pasta pieces through, usually less than 10 minutes.
The finished soup has a light broth with tender alphabet pasta floating throughout, accented by the sweetness and earthiness of the diced vegetables and gentle garlic flavor. The sofrito adds a subtle aromatic complexity that distinguishes it from a basic vegetable soup.
This soup can be served as a light meal or starter. It reheats well and can be stored refrigerated or frozen for later meals. Variations include adding crushed tomatoes for a Mexican twist or substituting vegetable stock for a vegan version.

Ingredients
- 7 ounce alphabet pasta package
- 1 tablespoon olive oil
- 1 carrot about a cup, large, peeled and cut into chunks
- 1/2 onion about a 1/2 cup, small, cut into chunks
- 1 bunch scallions about 2 cups, both white and green parts, cut into chunks
- 1 celery about a 1/2 cup, stalk, cut into chunks
- 2 teaspoons sofrito or 3 cloves of garlic, minced, Brazilian style
- 7 cups chicken stock
- salt to taste
- black pepper to taste
Instructions
- Add the carrots, the celery, the onion, the Brazilian sofrito, and the scallions to a food processor, and pulse to mince. Set aside.
- Heat the olive oil in a large pot over medium to high heat, then add the minced vegetable mixture.
- Saute until soft, approximately 8-10 minutes.
- Add in the pasta and cover with the chicken stock.
- Bring to a simmer, and simmer until the noodles are cooked. This will take less than 10 minutes because the pasta is so small, so keep an eye on it!

- Let the soup cool completely before storing in the refrigerator for up to one week.
- Freeze in freezer-safe containers, leaving space for expansion; thaw in the refrigerator before reheating.
