Sorrel And Hazelnut Pesto

Sorrel and Hazelnut Pesto is a vibrant sauce blending the tartness of sorrel leaves with the rich, nutty flavor of ground hazelnuts and Parmesan cheese. Garlic, lemon zest, and kosher salt enhance the flavors, and olive oil creates a smooth consistency. This pesto serves well over pasta, on toasted bread, or as a condiment for grilled meats.

Ingredients

  • ½ c hazelnut
  • 1 teaspoon kosher salt
  • 1 clove garlic
  • 2 c Sorrel Leaves
  • ½ c olive oil
  • 1 teaspoon lemon zest
  • 1 c Parmesan Cheese 100 grams/3 oz, grated

Instructions

  1. In food processor (or with mortar and pestle if you feel like it and have the extra time) process the hazelnuts and salt until the nuts are very finely ground.  Add the garlic and process again until it is uniform with the nuts. 
  2. Add the sorrel, about ½ cup at a time until it is finely ground.
  3. Add the oil slowly, continuing to stir or process as you pour it in.
  4. Stir in the lemon zest and grated parmesan and season to taste with salt. Add extra oil in you want a looser sauce.
  5. Serve with hot pasta like fettuccine or pappardelle, on crostini or as a condiment on white beans, grilled fish or chicken.
