Description

This pesto recipe combines roughly ground hazelnuts and salt with fresh sorrel leaves processed gradually to maintain texture and color. Minced garlic is blended with the nuts before adding sorrel leaves in batches, creating an herbaceous base. Olive oil is drizzled in slowly to achieve a cohesive and spreadable sauce. Lemon zest introduces a bright citrus note, while Parmesan cheese adds savory depth and umami.

Ingredients

  • ½ c hazelnut
  • 1 teaspoon kosher salt
  • 1 clove garlic
  • 2 c Sorrel Leaves
  • ½ c olive oil
  • 1 teaspoon lemon zest
  • 1 c Parmesan Cheese 100 grams/3 oz, grated

Instructions

  1. In food processor (or with mortar and pestle if you feel like it and have the extra time) process the hazelnuts and salt until the nuts are very finely ground.  Add the garlic and process again until it is uniform with the nuts. 
  2. Add the sorrel, about ½ cup at a time until it is finely ground.
  3. Add the oil slowly, continuing to stir or process as you pour it in.
  4. Stir in the lemon zest and grated parmesan and season to taste with salt. Add extra oil in you want a looser sauce.
  5. Serve with hot pasta like fettuccine or pappardelle, on crostini or as a condiment on white beans, grilled fish or chicken.
