Sosis Bandari - Persian Sausage and Potatoes

Sosis Bandari is a Persian dish combining sautéed sliced beef sausage and diced russet potatoes with aromatic spices like turmeric, paprika, cumin, and oregano. The potatoes are cooked until golden and tender before being mixed back into the spiced sausage and onion tomato paste mixture. Ingredients

  • 1 lb sausage I used beef sausage
  • 2 russet potato peeled and diced
  • 1 large yellow onion chopped
  • 4 cloves garlic minced
  • 3 tablespoons tomato paste
  • 3 tablespoons canola oil or any neutral flavored oil
  • 1 teaspoon oregano
  • 1 teaspoon Turmeric
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • 1 teaspoon kosher salt

Instructions

  1. Slice the sausages lengthwise into halves and then cut each half into small half-moon pieces. Set aside.
  2. Heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Add the diced potatoes and sauté for 10-15 minutes, stirring occasionally until golden brown and tender. Transfer them to a plate and set aside. Alternatively you can roast the potatoes or cook them in the air fryer.
  3. In the same skillet, heat 1 tablespoon of oil. Add minced garlic and chopped onions and sauté until they are soft and golden brown, about 7-10 minutes.
  4. Add the sliced sausages to the onions and garlic. Sauté for about 10 minutes, stirring occasionally, until the sausages are slightly browned.
  5. Add in the oregano, turmeric, paprika, and cumin over the sausage and onion mixture.
  6. Add the tomato paste to the skillet and stir to combine. Cook for 2-3 minutes to let the paste caramelize slightly and develop a rich, deep flavor.
  7. Return the cooked potatoes to the skillet and mix everything gently. Stir until the potatoes are well combined.
  8. Serve warm with fresh greens and bread.

  • Use pre-cooked beef or chicken sausage with a smoky flavor for the most authentic taste.
  • Slice sausages evenly and sauté until just browned to maintain a firm texture.
  • Dice potatoes uniformly and sauté them until golden and tender to get crisp edges and a soft inside.
  • Cooking the tomato paste with sausage and spices is important to develop a rich and deep flavor while removing any raw taste.
