Sour Cream Pancakes

These sour cream pancakes are easy to make, just a few simple ingredients, and perfect for the weekend and simple enough for a weekday morning pancake breakfast craving!

Ingredients

  • 2 eggs
  • 3 tbsp sour cream
  • 1/2 cup water
  • 1 cup flour
  • 3 tbsp sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp vanilla optional
  • 1 tsp cinnamon optional

Instructions

  1. In a medium bowl, whisk together eggs, sour cream, and vanilla (if using)
  2. Add flour, sugar, baking powder, baking soda and cinnamon (if using).
  3. Add 1/2 cup of water and mix well.
  4. Heat a griddle or cast iron skillet over medium; brush with oil. Working in batches, scoop ⅓ cup of batter onto griddle. Cook pancakes until bottoms are golden brown and bubbles form on top, about 2 minutes. Flip and cook until cooked through and both sides of pancakes are golden brown, about 1 miutes longer.
