Ingredients
- 1 lb sweet potatoes
- ½ cup butter softened
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 1/4 cup whole milk
- 2 large eggs
- ½ tsp ground allspice
- ½ tsp ground nutmeg
- ½ tsp ground cinnamon
- 1 tsp vanilla
- 1 pie crust (9-inch) unbaked

Instructions
- Place sweet potato in pot and cover with water. Bring to a boil and cook until tender when pierced with a fork, 45 to 50 minutes.
- Preheat the oven to 350°F.
- Remove sweet potato from the pot and run under cold water. When cool enough to handle, peel and discard the skins. Transfer to a blender along with butter, sugars, maple syrup, milk, eggs, spices and vanilla. Puree until smooth.
- Pour the filling into the unbaked pie crust. Tap gently on counter to remove any air bubbles.
- Bake until a toothpick inserted into the center comes out clean, 55-60 minutes. Remove from oven and let cool before slicing and serve with whipped cream on top.
