Ingredients
For the avocado salad
- 2 medium-sized avocados
- 1 cup canned black bean, drained and washed
- 1 cup frozen corn, thawed
- 1 cup orange bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/3 cup red onion, diced
- 1 tbsp jalapeno, chopped
- 2 tbsp cilantro chopped
- 2 tbsp feta cheese
For the lemon dressing
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp honey
- 1/2 tsp minced garlic
- 1/2 tsp ground black pepper
- 1/2 tsp salt
- 1/4 tsp ground cumin
Instructions
- Prepare the lemon vinaigrette by combining the ingredients mentioned for dressing in a bowl and mix it with a fork or whisk and set aside.
- Remove the seeds and dice the avocados; add it to a large bowl along with the black beans, corn, bell pepper, tomatoes, red onions, jalapenos and cilantro.
- Pour the prepared dressing over the salad and toss to combine.
- Add the feta cheese and transfer the salad to a bowl and serve.
