Southwest Baked Ham and Eggs Potato Hash

Southwest Baked Ham and Eggs Potato Hash is a fabulous breakfast made all in one pan. Crispy potatoes, ham, peppers, black beans, and corn all surround a perfectly baked egg. This is a hearty flavorful breakfast that the family will love!

Ingredients

  • 1 ½ pounds quartered baby red potatoes
  • 1 cubed yellow bell pepper
  • 1 cubed red bell pepper
  • 1 cup fresh corn
  • 1 cup Rinsed and drained black beans
  • ½ cup diced onion
  • 2 tablespoons olive oil
  • 1 tablespoon chili seasoning
  • ½ teaspoon cumin seasoning
  • ½ teaspoon paprika
  • salt and pepper to taste
  • 1 cup cubed ham
  • 5 large eggs
  • fresh chopped cilantro for garnish
  • sliced avocado for garnish

Instructions

  1. Preheat oven to 425 degrees Fahrenheit. Spray a baking sheet with cooking spray.
  2. Place 1 ½ pounds quartered baby red potatoes, 1 cubed yellow bell pepper, 1 cubed red bell pepper , 1 cup fresh corn, 1 cup rinsed and drained black beans, and ½ cup diced onion on the baking sheet.
  3. Drizzle with 2 tablespoons olive oil and add 1 tablespoon chili seasoning, ½ teaspoon cumin seasoning, and ½ teaspoon paprika. Toss to coat and season with salt and pepper to taste. Bake for 15 minutes.
  4. Remove the pan and 1 cup cubed ham and stir the vegetables. Bake for an additional 10 minutes or until potatoes are tender. Remove from oven.
  5. Create 5 holes in the vegetables. Gently crack 5 large eggs in each. Return the pan to the oven and bake for an additional 5-10 minutes or until eggs are to desired doneness.
  6. Garnish with fresh chopped cilantro for garnish andsliced avocado for garnish and serve immediately.
