Ingredients

Salad Dressing:
  • ½ cup roughly chopped cilantro
  • ½ cup olive oil
  • 3 tablespoons lime juice
  • 2 minced garlic cloves
  • 1 teaspoon honey
  • 1 teaspoon chipotle powder
  • 1 teaspoon oregano
  • 1 teaspoon salt
For the Salad:
  • 2 cups chopped romaine lettuce
  • 2 cups cooked quinoa
  • 1 cup drained black beans
  • ¾ cup drained corn
  • 1 cup halved cherry tomatoes

Instructions

  1. Add ½ cup roughly chopped cilantro, ½ cup olive oil, 3 tablespoons lime juice, 2 minced garlic cloves, 1 teaspoon honey, 1 teaspoon chipotle powder, 1 teaspoon oregano and 1 teaspoon salt in a blender. Blend until smooth.
  2. In a large bowl add the 2 cups chopped romaine lettuce, 2 cups cooked quinoa, 1 cup drained black beans, ¾ cup drained corn, and 1 cup halved cherry tomatoes. Toss with the salad dressing and serve immediately.
