                                Ingredients
Salad Dressing:
- ½ cup roughly chopped cilantro
 - ½ cup olive oil
 - 3 tablespoons lime juice
 - 2 minced garlic cloves
 - 1 teaspoon honey
 - 1 teaspoon chipotle powder
 - 1 teaspoon oregano
 - 1 teaspoon salt
 
For the Salad:
- 2 cups chopped romaine lettuce
 - 2 cups cooked quinoa
 - 1 cup drained black beans
 - ¾ cup drained corn
 - 1 cup halved cherry tomatoes
 
Instructions
- Add ½ cup roughly chopped cilantro, ½ cup olive oil, 3 tablespoons lime juice, 2 minced garlic cloves, 1 teaspoon honey, 1 teaspoon chipotle powder, 1 teaspoon oregano and 1 teaspoon salt in a blender. Blend until smooth.
 - In a large bowl add the 2 cups chopped romaine lettuce, 2 cups cooked quinoa, 1 cup drained black beans, ¾ cup drained corn, and 1 cup halved cherry tomatoes. Toss with the salad dressing and serve immediately.
