Southwest Quinoa Salad

This Southwest Quinoa Salad is loaded with fresh veggies and packed with southwest flavor. The perfect side for summer cookouts, pot lucks, or weeknight dinners!

Ingredients

  • 1 c. quinoa 3 cups cooked, uncooked
  • 1 c. tomato chopped
  • 1 c. bell peppers chopped
  • 1 c. corn charred
  • ½ c. black beans drained
  • ½ c. onion red, chopped
  • 1 avocado chopped
  • cilantro for garnish, fresh
For dressing:
  • ½ c. olive oil
  • 2 Tbsp. lemon juice
  • 2 Tbsp. lime juice
  • 2 Tbsp. cilantro minced
  • 1 tsp. cumin
  • 1 tsp. Coriander
  • 1 tsp. chili powder
  • 1 tsp. salt
  • ½ tsp. cayenne pepper

Instructions

    Cup of Yum
  1. Prepare quinoa according to package instructions. Set aside to cool.
  2. While quinoa is cooling, prepare veggies.
  3. Combine quinoa and veggies in a large mixing bowl.
  4. Prepare dressing by combining ingredients and shaking until well mixed.
  5. Pour dressing over quinoa and veggies and stir to combine.
  6. Spoon into serving bowl and garnish with fresh cilantro.
