Ingredients
- 2 tablespoons olive oil
- 1/2 large onion diced
- 1 small sweet potato peeled and cubed, 1/4 inch pieces
- 2 hot Italian sausages
- 1 small zucchini
- 1 ear sweet corn kernels removed
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- garlic salt & pepper to taste
- 2 cups leftover cooked quinoa
- 6 butter lettuce leaves washed and dried
- cilantro and red onion for garnish
Instructions
- Place large skillet over medium heat. Sauté onion and sweet potato in olive oil.
- Remove sausage from casings and place into pan, breaking it up as it cooks. Once sausage is thoroughly cooked, stir in zucchini, corn and spices.
- Cook another 3-4 minutes. Add in the quinoa to warm it through. Spoon into lettuce leaves, top with cilantro and red onion if desired and serve.
