Southwestern Rice Bowl
A Southwestern Rice Bowl is a go-to easy dinner that is simply scrumptious! Add any fresh ingredients like cilantro, guacamole, salsa, olives, or other favorites.
Ingredients
- 1 lb chicken breast shredded or Ground Turkey Meat, browned, cooked
- 1 cup brown rice cooked
- 10 oz black beans I use low sodium
- ½ lb corn or can of corn, frozen
- cilantro chopped, fresh
- salsa or fresh cut tomatoes
- PLAIN yogurt or low fat sour cream, fat free
- avocado optional, sliced, or guacamole
- scallions optional, chopped
- cheese optional, shredded
- black pepper to taste
Instructions
- Cook chicken, if necessary, and shred into pieces.
- Cook rice as directed.
- Layer rice, chicken, black beans, and then corn in a bowl.
- Top with Cilantro, salsa, fat free plain yogurt, scallions and cheese.
