Soy Sauce Chicken Wings

This recipe produces tender chicken wings cooked under pressure in a savory sauce made from soy sauce, dark soy sauce, brown sugar, garlic, ginger, and sesame oil. The wings can be cooked from frozen in an instant pot, making preparation straightforward. After pressure cooking, chopped green onions are stirred in, and excess fat is skimmed from the sauce, resulting in flavorful, slightly sweet wings with aromatic notes from the garlic and ginger.

Ingredients

  • 1.5 pounds chicken wings party style
  • 2 ticks green onion
  • 4 lices ginger
  • 6 cloves garlic
  • ½ tablespoon sesame oil
Sauce mixture:
  • ½ cup soy sauce
  • ½ cup water
  • 2 tablespoons dark soy sauce
  • 3 tablespoons brown sugar

Instructions

  1. In a bowl, add ½ cup of soy sauce, ½ cup of water, 2 tablespoons of dark soy sauce, and 3 tablespoons of brown sugar. Then, mix them well. 
  2. Push the sauté button on the instant pot. After, add ½ tablespoon of sesame oil, 4 slices ginger, and 6 cloves of garlic. Stir fry them a little bit.
  3. Next, add 1.5 pounds of washed party chicken wings into the pot. (The chicken wings don't need to be completely thaw. I used frozen party chicken wings.)
  4. After that, stir the sauce mixture well and pour into the pot.
  5. The following step, mix the sauce with the chicken well. After, close the lid and vent. Push the manual button to adjust time for 5 minutes at high pressure. Then, naturally release the pressure.
  6. In the meanwhile, cut 2 sticks of green onion into small strips.
  7. Lastly, add green onion and mix them. Then, use a skimmer to remove excess fat from the sauce.

Notes

  • Frozen chicken wings can be used directly in the instant pot without thawing.
  • Adjust the quantity of chicken wings according to your needs; the cooking time remains the same.
  • Mix the sauce thoroughly with the chicken wings before pressure cooking to ensure even flavor.
  • Skim excess fat from the sauce after cooking for a cleaner finish.
  • Add chopped green onions at the end to maintain their freshness and flavor.
