Soy Sauce Chicken Wings are cooked quickly in an instant pot using a rich sauce that combines light and dark soy sauces, brown sugar, and water for a balanced savory and sweet flavor. Garlic, ginger, and sesame oil are sautéed first to release their aromas before adding the chicken wings and sauce. The wings, which can be used frozen, come out tender after 5 minutes at high pressure, absorbing the soy sauce mixture. Finishing with fresh green onions adds brightness, while skimming off excess fat refines the sauce's texture. This method delivers flavorful wings without deep frying or oven roasting.

  • 1.5 pounds chicken wings party style
  • 2 ticks green onion
  • 4 lices ginger
  • 6 cloves garlic
  • ½ tablespoon sesame oil

Sauce mixture:

  • ½ cup soy sauce
  • ½ cup water
  • 2 tablespoons dark soy sauce
  • 3 tablespoons brown sugar

Instructions

  1. In a bowl, add ½ cup of soy sauce, ½ cup of water, 2 tablespoons of dark soy sauce, and 3 tablespoons of brown sugar. Then, mix them well. 
  2. Push the sauté button on the instant pot. After, add ½ tablespoon of sesame oil, 4 slices ginger, and 6 cloves of garlic. Stir fry them a little bit.
  3. Next, add 1.5 pounds of washed party chicken wings into the pot. (The chicken wings don't need to be completely thaw. I used frozen party chicken wings.)
  4. After that, stir the sauce mixture well and pour into the pot.
  5. The following step, mix the sauce with the chicken well. After, close the lid and vent. Push the manual button to adjust time for 5 minutes at high pressure. Then, naturally release the pressure.
  6. In the meanwhile, cut 2 sticks of green onion into small strips.
  7. Lastly, add green onion and mix them. Then, use a skimmer to remove excess fat from the sauce.

Notes

  • Frozen chicken wings can be used directly in the instant pot without thawing.
  • Adjust the quantity of chicken wings according to your needs; the cooking time remains the same.
  • Mix the sauce thoroughly with the chicken wings before pressure cooking to ensure even flavor.
  • Skim excess fat from the sauce after cooking for a cleaner finish.
  • Add chopped green onions at the end to maintain their freshness and flavor.
