Spaghetti Aglio e Olio

Spaghetti aglio e olio (pasta with garlic and olive oil), is one of the simplest pasta dishes from Neapolitan cuisine and the center of Italy.

Ingredients

  • 1 lb pasta
  • ½ cup extra virgin olive oil
  • 8 cloves garlic , germ removed, and chopped or minced
  • fine salt
  • black pepper , freshly ground
  • parsley (or fresh basil)
  • coarse salt , for cooking the spaghetti

Instructions

  1. In a large pot, bring a large amount of salted water to a boil.
  2. Cook the spaghetti, according to package directions, until al dente.
  3. Meanwhile, heat the extra virgin olive oil in a deep skillet over medium heat.
  4. Add the garlic and brown it lightly without burning.
  5. Add the parsley (or basil) and a ladle of the pasta cooking water.
  6. When the pasta is cooked, drain, and immediately add it directly to the skillet.
  7. Season with salt and freshly ground black pepper.
  8. Serve immediately.
