Spaghetti aglio e olio (pasta with garlic and olive oil), is one of the simplest pasta dishes from Neapolitan cuisine and the center of Italy.

Ingredients
- 1 lb pasta
- ½ cup extra virgin olive oil
- 8 cloves garlic , germ removed, and chopped or minced
- fine salt
- black pepper , freshly ground
- parsley (or fresh basil)
- coarse salt , for cooking the spaghetti
Instructions
- In a large pot, bring a large amount of salted water to a boil.
- Cook the spaghetti, according to package directions, until al dente.
- Meanwhile, heat the extra virgin olive oil in a deep skillet over medium heat.
- Add the garlic and brown it lightly without burning.
- Add the parsley (or basil) and a ladle of the pasta cooking water.
- When the pasta is cooked, drain, and immediately add it directly to the skillet.
- Season with salt and freshly ground black pepper.
- Serve immediately.
