Spaghetti Pie

A bed of spaghetti crust, then is piled with cheeses and a meat sauce makes an easy dinner that can be prepped ahead of time or frozen.

Ingredients

  • 7 oz uncooked spaghetti
  • 2 eggs beaten
  • 1/3 c. Parmesan Cheese
  • 2 Tbsp butter
  • 1 lb ground beef
  • 24 oz spaghetti sauce
  • 1 c. cottage cheese
  • 1 c. shredded mozzarella

Instructions

  1. Cook spaghetti until almost tender. Drain. Combine with eggs, Parmesan cheese and butter.
  2. Pat the mixture into a 10 in pie plate to form a crust.Top crust with cottage cheese.
  3. Brown hamburger, drain and add to spaghetti sauce. Put on top of cottage cheese.
  4. Bake at 350 degrees for 20-30 minutes. Top with mozzarella cheese and bake 5-10 more minutes. Let stand 5 minutes before cutting.

Notes

  • Can it be made ahead of time? Absolutely! Prepare the recipe but hold off on baking it until dinnertime. When you want to make it follow the baking directions. You will need to add about 10-15 minutes of baking time on due to the fact it will be cold when you start. We recommend taking the pie out of the refrigerator while preheating the oven especially if you are using a glass pie dish.
  • Freezer Directions: Skip the mozzarella topping and simply cover with foil and then place in a large, plastic baggie and place in the freezer. Freeze in a disposable foil pan for even easier clean up. It can go straight from freezer to oven. You will need to add an additional 30-45 minutes of baking time on because it is frozen when starting. Add Mozzarella after the first baking time like stated in original directions.
  • Leftovers: Store in airtight container for 3-4 days. They can be microwaved to reheat. They can also be frozen in single serving portions. We recommend letting them thaw in refrigerator overnight and reheating in microwave the next day for lunch.
  • Cool: It is very important to let the spaghetti pie sit for at least 5-10 minutes before cutting into it so it has a chance to set. Otherwise it will not slice into pie wedges and will look more like a casserole.
