Ingredients
- 2 tablespoons cooking oil divided
- 2 eggs beaten and lightly salted
- 340 grams (11.99 ounces) spam diced
- 1 teaspoon minced garlic
- 3 cups (360 grams, 12.70 ounces) day old cooked basmati rice
- 50 grams (1.76 ounces) frozen green peas defrosted
- ½ cup (50 grams, 1.76 ounces) green (spring) onions finely chopped
- salt to taste
Instructions
- Heat a wok or deep frying pan over high heat, add 1 tablespoon of cooking oil and pour in the beaten eggs. Scramble the eggs. Remove the eggs once cooked and set aside.
- Add another 1 tablespoon of cooking oil to the wok. Add the diced spam to the wok. (see note 1). Cook the spam until it is golden brown, this could take 4 to 5 minutes.
- Add the minced garlic, and mix through for 1 to 2 minutes.
- Place the cooked basmati rice in the wok and mix through. Break up the rice if it is clumped together. Stir fry the rice for about 4 to 5 minutes.
- Add the green peas, green onions, and eggs to the rice mixture. Mix until well combined. Turn off heat. Season with salt. Serve.

Notes
- Be careful when you add the spam as it can splatter. Slowly add it to the wok.
