Spelt Flour Waffles Recipe

These simple spelt waffles are light, airy and crisp. The perfect platform for pure maple syrup. Plus the spelt offers a wondrously nutty essence.

Ingredients

  • 2 1/4 cups spelt flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon  salt
  • 2 large eggs
  • 1 cup milk (any variety)
  • 3/4  cup seltzer water
  • 1/4  cup almond oil

Instructions

  1. Preheat your waffle iron until it's scorching hot. Mix the dry ingredients in a large bowl. Then whisk in all the wet ingredients until smooth.
  2. Scoop the batter onto the waffle iron. Fill until close to the edges, but not all the way to the edges. Close and cook for 2-5 minutes, then repeat. *Try adding chopped almonds or pecans to the batter.
