Homemade spiced ginger simple syrup made with sugar (or panela/piloncillo), water, fresh ginger, cinnamon, cloves, and all spice.

Ingredients
- 2 ounce chunk of fresh ginger crushed or grated
- 2-3 cinnamon sticks
- 4 cloves
- 3 all spice berries
- 2 cups of sugar – could also use panela/piloncillo
- 2 cups of water use less for a thicker syrup
Instructions
- Combine all the ingredients in a small saucepan and heat over low-medium heat.
- Stir until the sugar is completely dissolved.
- Reduce heat and simmer for about 30 minutes.
- Let the syrup cool down and strain to remove the ginger and spices.
- Use as needed.
