Ingredients

  • 1/4 cup neutral cooking oil of your choice, (melted if a hard oil, generic cooking oil
  • 1/2 cup honey can substitute sugar and 1 T extra juice or milk
  • 1 teaspoon vanilla
  • 2 egg beaten
  • 1/4 cup fruit juice from can of pears or milk (or 2T juice + 2 T rum)
  • 1 cup whole wheat flour or all purpose
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon cardamom optional
  • 1 teaspoon cinnamon
  • 1 1/2 cup pear 15 ounces can/jar, drained & chopped, or 2-3 cored and chopped fresh or frozen pears, chopped

Instructions

    Cup of Yum
  1. Combine honey, oil, vanilla and fruit juice. Add beaten egg and combine well.
  2. Mix dry ingredients (except pears) and combine with wet ingredients.
  3. Fold in chopped pears
  4. Grease or spray a loaf pan and flour the bottom.
  5. Bake at 350F until bread tests done with a toothpick--about an hour.
  6. Wait 5 minutes, then remove from pan and cool on wire rack.
