Spiced Pumpkin Cookies With Raisins and Nuts

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg, plus 1 egg yolk
  • 1 1/4 cup canned pumpkin
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all purpose flour, sifted
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 cup raisins
  • 1 cup Chopped pecans or walnuts

Instructions

  1. Preheat oven to 350 degrees F.
  2. Cream butter and add sugar gradually.
  3. Cream until light and fluffy.Add eggs, pumpkin, and vanilla extract; mix well.
  4. Add in dry ingredients and mix until combined.
  5. Add raisins and nuts. Drop by tablespoons on parchment lined baking sheet.
  6. Bake for approximately 15 to 20 minutes.

Notes

  • May be frozen, if desired.
  • Feel free to swap in pepitas for a nut-free version.
  • Dried cranberries can be used in place of raisins.
