Ingredients
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 1/4 cup brown sugar
- 1 egg, plus 1 egg yolk
- 1 1/4 cup canned pumpkin
- 1 teaspoon vanilla extract
- 2 1/2 cups all purpose flour, sifted
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1 cup raisins
- 1 cup Chopped pecans or walnuts

Instructions
- Preheat oven to 350 degrees F.
- Cream butter and add sugar gradually.
- Cream until light and fluffy.Add eggs, pumpkin, and vanilla extract; mix well.
- Add in dry ingredients and mix until combined.
- Add raisins and nuts. Drop by tablespoons on parchment lined baking sheet.
- Bake for approximately 15 to 20 minutes.
Notes
- May be frozen, if desired.
- Feel free to swap in pepitas for a nut-free version.
- Dried cranberries can be used in place of raisins.
