Spicy Basil Chicken

Ingredients

  • 2 tsp canola oil
  • 2 shallots minced
  • 3 boneless skinless chicken breasts cut into 1-inch pieces
  • 3 cloves of garlic minced
  • ½ tbsp fish sauce
  • 1 tbsp soy sauce
  • 2 tsp sugar
  • 1 tsp Sriracha sauce more if you want it really spicy
  • 1 tsp water
  • ½ tsp cornstarch
  • ⅓ cup of sliced basil leaves

Instructions

  1. Heat the canola oil in a large skillet or wok over medium-high heat. Add shallots to the pan; cook for 30 seconds or until fragrant.
  2. Add the chicken to the pan; cook for 7-8 minutes, stirring often, until cooked through.
  3. Add the minced garlic and cook, stirring constantly, for 1 minute.
  4. Combine the fish sauce, sugar, soy sauce, sriracha, water, and cornstarch together, stirring with a whisk.
  5. Add the mixture to the chicken and cook for 1 minute or until the mixture thickens, stirring to coat the chicken.
  6. Remove from heat, then add the fresh basil. Serve immediately. Enjoy.
