Spicy Blood Orange Chicken
This delicious roasted Spicy Blood Orange Chicken is perfect for company and easy enough for a weeknight.
Ingredients
- 1 ½ lb chicken breast bone-in
- 1 ½ lb chicken thigh
- 1 ½ lb chicken wing
- 3 tablespoon olive oil
- 1 teaspoon garlic powder
- ¼ tsp oregano
- 1 teaspoon cumin
- ¼ teaspoon ginger
- ½ teaspoon cinnamon
- ¼ teaspoon cayenne pepper
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 3 blood orange sliced thin, Sunkist brand
- ¼ cup blood orange juice fresh squeezed
- ½ red onion sliced thin
- 1 ½ cups potato halved, small
Instructions
- Preheat oven to 450°.
- In a medium-sized bowl, combine the chicken, olive oil, garlic, oregano, cumin, ginger, cinnamon, cayenne, salt, and pepper. Toss well to evenly coat the chicken.
- Lay the blood oranges on the bottom of a rimmed sheet pan. Place the chicken pieces on top. Add the potatoes and onion around the sides of the chicken. Drizzle with more olive oil and salt and pepper.
- Drizzle all the chicken and vegetables with the blood orange juice.
- Roast for 30-40 minutes or until chicken is cooked through tossing once while cooking.
