Spicy Blood Orange Chicken

Ingredients

  • 1 ½ lb chicken breast bone-in
  • 1 ½ lb chicken thigh
  • 1 ½ lb chicken wing
  • 3 tablespoon olive oil
  • 1 teaspoon garlic powder
  • ¼ tsp oregano
  • 1 teaspoon cumin
  • ¼ teaspoon ginger
  • ½ teaspoon cinnamon
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 3 blood orange sliced thin, Sunkist brand
  • ¼ cup blood orange juice fresh squeezed
  • ½ red onion sliced thin
  • 1 ½ cups potato halved, small

Instructions

  1. Preheat oven to 450°.
  2. In a medium-sized bowl, combine the chicken, olive oil, garlic, oregano, cumin, ginger, cinnamon, cayenne, salt, and pepper. Toss well to evenly coat the chicken.
  3. Lay the blood oranges on the bottom of a rimmed sheet pan. Place the chicken pieces on top. Add the potatoes and onion around the sides of the chicken. Drizzle with more olive oil and salt and pepper.
  4. Drizzle all the chicken and vegetables with the blood orange juice.
  5. Roast for 30-40 minutes or until chicken is cooked through tossing once while cooking.
