Spicy Chipotle White Bean Dip

A healthy bean dip with a spicy kick that you could easily make in the food processor in 5 minutes!

Ingredients

  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 1-3 chipotle peppers in adobo sauce or more, to taste
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • 1 teaspoon cumin
  • 1 teaspon chili powder
  • ¼ cup plus 2 tablespoons olive oil

Instructions

  1. In the bowl of a food processor, combine cannellini beans, chipotle peppers, garlic, Meyer lemon juice, cumin and chili powder.
  2. With the motor running, add olive oil in a slow stream until emulsified.
  3. Serve with pita bread or tortilla chips, if desired.
