Ingredients

  • 1 pound high-quality dark chocolate (70% cacao or higher recommended), finely chopped
  • ¼ cup sliced almonds
  • 1-2 teaspoons chipotle powder (or to taste, start with less and add more if desired)
  • ¼ teaspoon sea salt (optional, enhances the flavor)

Instructions

    Cup of Yum
  1. Prepare the pan: Line a baking sheet with parchment paper.
  2. Melt the chocolate: In a heatproof bowl set over a saucepan of simmering water (double boiler), melt the dark chocolate, stirring frequently until smooth. Alternatively, you can melt the chocolate in the microwave in 30-second intervals, stirring after each interval, until melted and smooth. Be careful not to overheat the chocolate, as it can seize.
  3. Add spices and nuts: Remove the melted chocolate from the heat. Stir in the chipotle powder and sea salt (if using). Taste and adjust the amount of chipotle powder if needed.
  4. Spread the chocolate: Pour the melted chocolate onto the prepared baking sheet. Spread it evenly into a thin, even layer using a spatula.
  5. Add almonds: Sprinkle the sliced almonds evenly over the melted chocolate. Gently press them into the chocolate.
  6. Chill: Refrigerate the chocolate bark for at least 2 hours, or preferably overnight, to allow it to set completely.
  7. Break into pieces: Once the chocolate is firm, break it into irregular pieces.

Notes

  • Chocolate Quality: Use high-quality dark chocolate for the best flavor and texture.
  • Chipotle Powder: Chipotle powder adds a smoky heat to the bark. Start with a smaller amount and add more if you want it spicier. You can also use finely minced chipotle peppers in adobo sauce (use sparingly).
  • Nut Variations: You can use other nuts instead of almonds, such as pecans, walnuts, or pistachios. You can also add dried fruit, such as cranberries or cherries.
  • Storage: Store the chocolate bark in an airtight container at room temperature for up to 2 weeks, or in the refrigerator for up to 1 month.
