SPICY, CRUNCHY, ROASTED CHICKPEA SNACKS

Ingredients

  • 15 ounce garbanzo beans, drained (reserve the juice for baking) and rinsed
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground sea salt
  • 1 teaspoon extra-virgin olive oil optional
  • ¼ teaspoon cayenne pepper only if you like spicy food

Instructions

  1. Preheat oven to 375°F (190°C) and line a rimmed baking sheet with parchment paper
  2. In a small bowl, whisk the spices until combined
  3. In a medium bowl, stir the spices and olive oil (this will make the beans crunchier, leave it out if you don’t eat oil) until the beans are completely covered in the spice blend. Spread the beans out on the baking sheet. They should be spread out, not piled up.
  4. Bake for 20 minutes then shake the pan to turn the chickpeas. Bake another 10 to 20 minutes, or until they’re crunchy in the center.
  5. Enjoy!
