Ingredients

  • 6 cucumber sliced or 3 large regular cucumbers, mini
  • ½ teaspoon salt
  • 1 garlic minced, clove
  • 1 teaspoon ginger minced, fresh
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • ½ teaspoon sesame oil
  • ½ tablespoon agave syrup or maple syrup
  • ½ teaspoon crushed red pepper flakes
  • 1 teaspoon sesame seeds garnish
  • green onions thinly sliced, garnish
  • red pepper flakes garnish, crushed

Instructions

  1. Wash and slice the cucumbers. Put them in a large bowl and set aside.
  2. In a small bowl add the salt, garlic, ginger, soy sauce, rice vinegar, sesame oil, agave or maple syrup, and crushed red pepper flakes. Mix well and let it sit for 5 minutes for the flavors to combine.
  3. Add the dressing to the bowl with the cucumbers and mix well.
  4. Serve and top with green onions, sesame seeds, and crushed red peppers.

Notes

  • Slice cucumbers thick enough to retain crispness and avoid rapid sogginess.
  • Make the dressing ahead of time to allow flavors to meld thoroughly before mixing with cucumbers.
  • Use a mandoline or slicing tool to achieve uniform cucumber slices quickly and evenly.
