Ingredients
- 1 large English cucumber
- ½ teaspoon salt fine sea salt
- 1 Tablespoon sesame oil toasted
- 2 teaspoons soy sauce or certified GF tamari
- 2 teaspoons maple syrup
- 2 teaspoons sriracha or similar spicy chile sauce
- 1 teaspoon rice vinegar
- 2 medium cloves garlic minced
- ½ teaspoon red pepper flakes or gochugaru, Korean chili flakes
- 1 Tablespoon sesame seeds
Instructions
- Slice the cucumber into ¼-inch thick coins. Place in a large bowl and toss with sea salt. Set aside for 15 minutes. Then rinse under cold water and pat dry.
- To make the dressing, whisk together the sesame oil, soy sauce, maple syrup, sriracha, vinegar, garlic, chili flakes, and sesame seeds. Taste and adjust the flavors as desired.
- Pour the dressing over the cucumber and gently stir. Enjoy now or refrigerate until ready to serve.
Notes
- Serve as a side with sandwiches, grain bowls, noodles, or burgers for added texture and heat.
- Store covered in the fridge up to 4 days; salad tastes best chilled.
- Not suitable for freezing as cucumber texture will degrade.
