Spicy Cucumber Salad

Spicy Cucumber Salad features crisp cucumber coins tossed in a tangy, spicy dressing made with toasted sesame oil, soy sauce, maple syrup, sriracha, and garlic. The salad delivers a refreshing crunch paired with a balanced heat and slight sweetness, making it a flavorful side or topping for various dishes.

Description

This Spicy Cucumber Salad starts with sliced English cucumber that is salted to draw out excess moisture and then rinsed and dried for a crisp bite. The dressing blends toasted sesame oil, soy sauce, maple syrup, sriracha, rice vinegar, minced garlic, and chili flakes for a complex mix of savory, sweet, tangy, and spicy elements. Sesame seeds add subtle nuttiness and texture when sprinkled on top.

The combination offers a cool crunch brightened by fiery notes and umami richness, ideal as a side dish, on sandwiches, or grain bowls for added zest. It can be prepared ahead and kept chilled, retaining its refreshing nature.

This salad keeps well in the refrigerator for up to four days, although it is not suitable for freezing due to the fresh cucumber content.

  • Store covered in the fridge up to 4 days; salad tastes best chilled.
  • Not suitable for freezing as cucumber texture will degrade.
