Spicy Guacamole Plantain Cups

Give your parties a latin twist and enjoy crispy Plantain Cups filled with spicy guacamole. Perfect as finger appetizers to any party of celebration

Ingredients

For Plantain Cups
  • 3 Green Plantains (unripe)
  • 1 cup vegetable oil
  • salt + pepper to taste
For Spicy Guacamole
  • 3 Avocados from Mexico ripe
  • 2 tomatoes chopped
  • 2 tablespoons cilantro chopped
  • 1 tablespoon lime juice
  • 1 Jalapeño seeded and diced
  • 2-3 dashes TABASCO® Sauce or more if you'd like

Instructions

For Plantain Cups
    Cup of Yum
  1. Heat the oil in a deep saucepan until it reached 350 degrees F. 
  2. Make 1-2 vertical slits on the plantain to peel it easily
  3. Slice it into 1 inch chunks
  4. Deep fry for 4-5 minutes or until golden. Remove from heat and place over paper towels to drain the excess oil 
  5. Place the chunks one at a time in a citrus squeezer and squeeze to make the "cup" shape. Alternately, you can also place them in a mini muffin tins and use the handle of a wide wooden spoon to make the indentations in the middle
  6. Refry the cups again for 3-4 minutes or until crisp. Drain on paper towels and fill 
For Spicy Guacamole
  1. Mash the Avocados using a fork. Add salt, pepper, tomatoes, cilantro, and jalapenos. Mix until combined
  2. Add the 1 tablespoon of lime juice and mix. If needed, add more lime juice
  3. Finish the guacamole by added the TABASCO® Sauce
Assembly
  1. Using a spoon, stuff the spicy guacamole in the cavities of the plantain cups. Garnish with a cilantro leaf and serve. 

Notes

  • *You can fry the plantain cups in advance and leave on the counter. When ready to serve, place them in a 375 F. oven for a few minutes to crisp up.
