Spicy mint crème fraiche sauce

This spicy mint crème fraiche sauce blends crème fraîche with mint, cilantro, parsley, garlic, Serrano peppers, and lemon juice. The result is a creamy, herbaceous sauce with a fresh, bright flavor and a controlled spicy kick. It's smooth yet slightly liquid, thickening after refrigeration, suitable for dolloping on grilled dishes or as a dip.

Ingredients

  • 8 ounces crème fraîche can also use sour cream or yogurt
  • 1 mint about ½ cup coarsely chopped, medium sized bunch
  • ¼ cup cilantro coarsely chopped
  • ¼ cup parsley leaves coarsely chopped
  • 2 garlic cloves
  • 1-2 Serrano pepper deveined and seeded, or other hot peppers
  • 3 tablespoons lemon juice about ½ lemon
  • salt to taste

Instructions

  1. Place all of the ingredients in the blender and blend well, but be careful to not over blend or you will get small buttery lumps instead of a smooth sauce.
  2. The sauce will be very liquid after you blend it, but if you return it to the refrigerator it will thicken.
