Spicy mint crème fraiche sauce
Description
The spicy mint crème fraiche sauce combines fresh herbs — mint, cilantro, and parsley — with garlic and hot Serrano peppers, all blended into crème fraîche along with lemon juice and salt. The herbs lend a bright, fresh character while the peppers provide heat that can be adjusted by the amount used or by removing seeds and veins. Garlic adds pungency and depth.
After blending, the sauce is liquidy and should be chilled to thicken slightly, yielding a creamy and flavorful condiment. It is versatile for complementing seafood, grilled meats, roasted vegetables, or as a zesty dip.
The sauce's fresh flavors and moderate heat make it an excellent accompaniment when a cool contrast is desired alongside spicy or savory dishes.
Ingredients
- 8 ounces crème fraîche can also use sour cream or yogurt
- 1 mint about ½ cup coarsely chopped, medium sized bunch
- ¼ cup cilantro coarsely chopped
- ¼ cup parsley leaves coarsely chopped
- 2 garlic cloves
- 1-2 Serrano pepper deveined and seeded, or other hot peppers
- 3 tablespoons lemon juice about ½ lemon
- salt to taste
Instructions
- Place all of the ingredients in the blender and blend well, but be careful to not over blend or you will get small buttery lumps instead of a smooth sauce.
- The sauce will be very liquid after you blend it, but if you return it to the refrigerator it will thicken.
