Spicy Peanut Noodles

Spicy Peanut Noodles feature Asian-style noodles tossed in a creamy, tangy peanut sauce with ginger, soy sauce, chili garlic sauce, and fresh lime juice. Ingredients

  • 12 to 16 ounces noodles
  • 1 Tablespoon neutral cooking oil generic cooking oil
  • 2 teaspoons ginger minced, fresh
  • 3 Tablespoons soy sauce
  • 2 Tablespoons Chili garlic sauce
  • 1 cup chicken broth (or pasta water)
  • 1/2 cup peanut butter creamy
  • 1 Tablespoon honey or sugar, or maple syrup
  • 1 Tablespoon lime juice fresh
Garnish:
  • green onions or chili crunch, chopped peanuts
  • cilantro
  • peanuts
  • Chili garlic sauce

Instructions

  1. Fill a pot with water and place over high heat until boiling. Add noodles and cook according to package instructions. Drain.
  2. While noodles are cooking, heat a large skillet over medium heat add oil and ginger and saute for 1 minute. Add soy sauce, chili garlic sauce, chicken broth, peanut butter, and honey. Stir together and cook for 3-4 minutes until the sauce is smooth and creamy. Stir in fresh lime juice. Add pasta water until the sauce is the desired consistency.
  3. Toss drained noodles into the sauce and toss to coat. Top with green onions/scallions, cilantro, and chopped peanuts.

Notes

  • Choose your preferred Asian-style noodles such as egg noodles, ramen, or stir-fry noodles; fresh noodles are recommended but dried spaghetti or linguine can also be used.
  • Vegetables can be added by sautéing before mixing into the sauce or simmering briefly in the sauce; good options include shredded carrots, broccoli, or peppers.
  • For additional protein, cooked chicken can be mixed in with the noodles and sauce.
  • To reduce salt, use low sodium soy sauce and chicken broth, or substitute with pasta water.
